Introducing - our New Head Chef, The Greenhouse Eatery

Head Chef Ben Leslie

Ben Leslie has been appointed as Head Chef of The Greenhouse Eatery, Pacific Dunes located in Medowie, Port Stephens. (July 2017). Ben is well known to the Hunter region food scene; mostly recently as Head Chef of The Edwards and Sous Chef of Rustica, both based in Newcastle.  He has also worked for award winning Margan Family Wines, Restaurant Esca (Bimbadgen Estate), Subo and one hatted restaurant – Muse in the Hunter Valley.

Ben has complimented his time around the region with international experience in the famous Two Michelin Star Restaurant; The Ledbury with Head Chef – Brett Graham and the equally as famous Three Michelin Star Restaurant; Heston Blumenthal’s - The Fat Duck.

Ben was inspired to join The Greenhouse Eatery team as it allows him the opportunity to specialise in his two loves – food and golf! He looks forward to the diversity of the role; providing a la carte, casual dining and the dynamics of both wedding and conference catering.

His timely arrival, in line with the well known Port Stephens destination event – “Love Seafood” means that Ben finds himself in the privileged position of working with the first harvest of Huon Yellowtail Kingfish that have been farmed in the pristine waters of Port Stephens for the last 12 months. The fish will be presented at the upcoming Signature Series dinner taking place on Saturday 26th August at The Greenhouse Eatery. The Kingfish will be the star of the evening and feature tailor made wine match over 4 courses. Ben says; “I am excited about the access to this type of seafood; locally sourced, fresh from the trawler and straight to the plate. I appreciate the care and precision that it has taken for Huon to get to this point and am looking forward to showcasing this fish to our guests.”

Ben is committed to sourcing and using local produce wherever possible. Even the array of herbs, fruits and vegetables that are being supplied directly from The Greenhouse organic garden will feature in the menu. Varietals such as basil, parsley, leeks, spring onions, apples, citrus fruits just to name a few.  In addition to this Ben and the team are supporting and buying from local organic suppliers like Green Helping Hand who grow mushrooms in recycled green waste (compost) as an example.
