It's so delicious, that we've had many requests for how to make it ~ so here it is!
It's a lovely, fresh salad that is simple to make but delicious to devour!
(& so you can sound like an expert next time ... it's "quin - oh - a")
Ingredients:
Tri coloured Quinoa (boil in water until soft)
Roast Pumpkin pieces
Asparagus
Red & Golden Beetroot pieces
Roast Onion
Orange Segments
Rocket
Orange Dressing
Toss all together, add Fetta Cheese, crumbled over top
Dressing
200 ml Vegetable Oil
200 ml Olive Oil
30 gm Dijon Mustard
60 ml Orange Juice
Whisk Dijon & Orange juice together, slowly pour into oil mix to avoid splitting.
